7th Annual Oyster and Pig Throw Down

On February 1, 2020 F2T Productions will hold its 6th Annual Oyster and Pig Throw Down. F2T Productions Pitmaster, Lou Hutto from LowCo Barbecue & Catering will devote 18-20 hours in order to expertly roast two whole 200 lb.Carolina Heritage Farms pigs for the picking. Clusters of Bulls Bay Oysters will be steamed and served by Kristian Niemi from Bourbon Columbia for guests to shuck all day.
Most don’t take into account the time and skill it takes to roast a whole hog. Lou Hutto from LowCo Barbecue emphasizes the importance of a low and slow technique, “Low temperature 200-225 degrees and a long cook time allows the tenderization and juiciness of the meat to happen.” Hutto says, “When the whole animal is cooked, especially a whole pig, it allows guests to fully taste the product. By incorporating all the cuts of a pig into one, guests can expect a distinct flavor you can’t get except from a whole pig.”
The oysters served up for the roast are wild-harvested from Bulls Bay. The bay is surrounded by saltmarshes just up the coast from Charleston. Even at just a few feet deep, the marshes are extensive, and are wide open to the Atlantic, making for a very salty oyster.
This year’s Throw Down will feature two local bands. Folly Beach native, Ashes of Old Ways and Columbia’s very own Mustache Brothers. Stoney Creek Cigars/South will also be joining with a pop-up shop featuring premium hand rolled and infused cigars for purchase.
The Roast will be held at City Roots Farm and tickets are $65. Tickets will cover all you can eat, skillfully roasted whole hog pulled into delicious pork, clusters of Bulls Bays oysters from McClellanville, S.C., F2T Mac n’ Cheese, Locally Sourced Collards, Cornbread, Blue Cheese Coleslaw and Baked Beans. This is a limited ticketed event, and tickets are only pre-sale.
