Pop-up restaurants are temporary restaurants that first came to prominence in Britain and Australia in the mid-2000s, and now are a growing trend in larger cities in the United States. The idea is for a chef to try out a new culinary concept without investing in large amounts of overhead, said Tammy Johnson, owner of The Old Cigar Warehouse.
“We are very excited to be bringing this business model to Greenville with Chef Collins,” she said. “He does amazing work and we know our venue will provide the right setting.”
