Lemon Butter Herb Salmon

You can use any type of fish to make this delicious baked dinner tonight.
- 4 pieces of salmon (or your favorite fish)
- Nonstick spray
- Salt, pepper, and creole seasoning
- 1/2 stick butter, melted
- Juice of 1/2 lemon
- Parsley, basil, oregano (dried) – pinch of each
Directions:
- Preheat oven to 350 degrees.
- Wash and pat dry fish.
- Spray a glass-baking dish with nonstick spray.
- Place fish (skin side down) in dish and sprinkle with salt, pepper, and creole seasoning.
- Meanwhile, melt butter in microwaveable dish and stir in butter, lemon juice and herbs.
- Using a teaspoon, coat top of fish with butter mixture preserving at least half.
- Bake fish for 5-10 minutes just until moist but flakes with a fork.
- Remove from oven and pour remaining butter sauce on top.
- Serve with your favorite fresh sides.
