Veggie Egg Scramble

High in protein, low in calories – a delicious quick breakfast plate.

 

Ingredients:

  • Cooking spray
  • 1 large egg, whipped with a fork
  • ¼ yellow onion, chopped
  • ¼ red pepper, chopped
  • Pinch of garlic powder, dried oregano, creole seasoning, salt & pepper
  • 2 Romaine lettuce leaves, washed and dried
  • Dried parsley

 

Directions: 

  1. Heat a non-stick pan to low heat and spray with cooking spray if desired.
  2. Sauté onion and peppers for 1-2 minutes until softened and fragrant.
  3. Meanwhile, add dried spices (except parsley) to egg mixture and whip with a fork.
  4. Pour egg mixture over veggies and fold with veggies using a spatula until liquid is absorbed.
  5. Lay lettuce leaves on a plate.
  6. Layer egg mixture on leaves and sprinkle with parsley.
  7. Roll into hand-held egg burritos or serve open faced and eat with fork and knife.
