Whipped Cauliflower

Looking for a substitute for mashed potatoes? This may be it.
Ingredients:
- 1 head fresh cauliflower
- 1 – 2 Tbsp. butter
- 1 Tbsp. cream
- Salt & Pepper
- Fresh chives
- *Optional: 1/2 tsp. garlic
Directions:
- Wash and dry cauliflower and cut into florets.
- Steam or boil cauliflower until tender and breaks apart with a fork.
- Place cauliflower in colander and allow water to fully drain.
- Transfer cauliflower back to a pot and mash using a potato masher.
- Add butter, cream, salt & pepper to taste, and garlic powder if using.
- Mash until creamy.
- Top with chopped chives for garnish.
