Crispy Beet Chips

Better than potato chips? Bet you can’t eat just one!
Ingredients:
- 3 beets, washed dried, stems removed
- 1 tsp. olive oil (not much)
Directions:
- Heat oven to 400 degrees.
- Remove tips and stems of beets.
- Carefully, using a thin slicer or a mandolin, slice beets into chips.
- Toss beet chips in a bowl with olive oil and sprinkle of salt.
- Lay beets flat on parchment paper and bake 15-20 minutes.
- Flip beets and continue baking for another 15-20 minutes until they are crispy or dry.
- Remove from oven and let cool.
- Store in an airtight container (if you can resist eating them all at once).
