Crispy Beet Chips

Better than potato chips? Bet you can’t eat just one!

 

Ingredients: 

  • 3 beets, washed dried, stems removed
  • 1 tsp. olive oil (not much)

 

Directions:

  1. Heat oven to 400 degrees.
  2. Remove tips and stems of beets.
  3. Carefully, using a thin slicer or a mandolin, slice beets into chips.
  4. Toss beet chips in a bowl with olive oil and sprinkle of salt.
  5. Lay beets flat on parchment paper and bake 15-20 minutes.
  6. Flip beets and continue baking for another 15-20 minutes until they are crispy or dry.
  7. Remove from oven and let cool.
  8. Store in an airtight container (if you can resist eating them all at once).
