CaprEASY Salsa

Ingredients:
- 3 ripe Roma tomatoes, diced
- 10 fresh Basil leaves, chopped
- 4 oz. fresh mozzarella, cubed
- Salt & Pepper to taste
- 1 Tsp. aged Balsamic vinegar
Directions:
- Gently fold tomatoes, basil, cheese, salt and pepper. (If not using right away, refrigerate in a covered container).
- Right before serving, drain juices from salsa and gently stir in balsamic vinegar.
- Serve immediately.
Uses:
- Great over grilled fish or chicken.
- Mix with hot or cold pasta.
- Spread toasted crostini slices with a layer of pesto and top with CaprEASY salsa mixture.
- Use as a pizza topping.
- Serve as a side salad.
