Healthy Recipe of the Week – Garlic Roasted Cauliflower

Easy enough for kids to make!
Ingredients:
- 1 large head of cauliflower
- 3 Tbsp. olive oil
- Sea Salt and Cracked Pepper
- 1/2 Tsp. Garlic Powder
- 2 Tbsp. butter, melted (optional)
- 3 Tbsp. grated Parmesan cheese (optional)
Directions:
- Preheat oven to 400 degrees.
- Wash and dry cauliflower.
- Cut cauliflower into small bite size pieces.
- Lay cauliflower pieces on a cookie sheet covered in parchment paper.
- Drizzle olive oil over cauliflower.
- Using clean hands, toss cauliflower around until covered in olive oil.
- Spread cauliflower out on cookie sheet.
- Season with salt, pepper, and garlic powder.
- Bake for approximately 20 minutes until edges are slightly browned and cauliflower is fork tender.
- Place in serving bowl.
Can be tossed in melted butter and sprinkled with Parmesan cheese before serving. (optional)
