Healthy Recipe of the Week – Sugar Cinnamon Pumpkin Seeds

These sweet and salty snacking seeds are packed with essential minerals and antioxidant support. Shhhh….don’t tell the kids they’re good for them!
1 1/2 cups pumpkin seeds, washed and dried
2 Tbsp. melted butter
2 Tbsp. light brown sugar
1 Tsp. Cinnamon powder
1/4 Tsp. salt
100% Stevia Powder, (dusting)
Directions:
Preheat oven to 350 degrees.
Line cookie sheet with parchment paper.
Melt butter in a large glass bowl.
Stir in sugar, cinnamon, and salt.
Toss in pumpkin seeds and stir to coat.
Spread seeds in single layer on baking sheet.
Bake for 30 minutes stirring occasionally to ensure even baking.
Remove from oven and “dust” seeds with 100% Stevia powder for added touch of sweetness.
Allow to cool and store in airtight container.
