Leftover Donut Bread Pudding

When I was given a dozen donuts the other day, my first thought was, “Oh my God. I now have a dozen donuts. My life is awesome!”
After the sugar high from the first two faded, my next thought was, “What am I going to do with all of these frickin donuts?”

I would feel weird bringing them to work the following day. Everyone gets excited about fresh donuts, but day-old donuts? Not so much.
I hate food waste. There are few things that make me feel guiltier than having to toss out spoiled fruits and veggies from my rarely-opened crisper (or rotter, as I have aptly renamed it). For 2016, one of my goals is to try to get creative with my groceries and leftovers, rather than let them spoil and toss them out.
As I stared at the box of two-day-old (Hey, great ideas take a little time) stale donuts, I had a eureka moment. I knew exactly what to make. And the best part is, this recipe works even better with stale donuts than with fresh ones (too mushy)!
Donut Bread Pudding.

Oh yes. It happened.
Ingredients:
- 6-8 Donuts. Assorted is fine as long as you’re cool with the combination you’re creating. Know your limitations.
- 2 tablespoons of butter, melted
- 4 eggs, beaten
- 1 ½ cups milk
- ¼ cup white sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Directions:
- Preheat oven to 350 degrees F
- Tear or slice donuts into 1”-ish pieces
- In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over donut bits. Make sure they’re fully soaked by the mixture.
- Bake for 45 minutes
- Consume the pudding.
- Feel more alive than you have in a long time.
- Really revel in this feeling.
- Feel slightly ashamed of yourself.
- You deserve to treat yourself every once in a while.
