Veggie Egg Scramble

High in protein, low in calories – a delicious quick breakfast plate.
Ingredients:
- Cooking spray
- 1 large egg, whipped with a fork
- ¼ yellow onion, chopped
- ¼ red pepper, chopped
- Pinch of garlic powder, dried oregano, creole seasoning, salt & pepper
- 2 Romaine lettuce leaves, washed and dried
- Dried parsley
Directions:
- Heat a non-stick pan to low heat and spray with cooking spray if desired.
- Sauté onion and peppers for 1-2 minutes until softened and fragrant.
- Meanwhile, add dried spices (except parsley) to egg mixture and whip with a fork.
- Pour egg mixture over veggies and fold with veggies using a spatula until liquid is absorbed.
- Lay lettuce leaves on a plate.
- Layer egg mixture on leaves and sprinkle with parsley.
- Roll into hand-held egg burritos or serve open faced and eat with fork and knife.
