Whipped Cauliflower

whipped-cauliflower-hhcLooking for a substitute for mashed potatoes? This may be it.

 

Ingredients:

  • 1 head fresh cauliflower
  • 1 – 2 Tbsp. butter
  • 1 Tbsp. cream
  • Salt & Pepper
  • Fresh chives
  • *Optional: 1/2 tsp. garlic

 

Directions:

  1. Wash and dry cauliflower and cut into florets.
  2. Steam or boil cauliflower until tender and breaks apart with a fork.
  3. Place cauliflower in colander and allow water to fully drain.
  4. Transfer cauliflower back to a pot and mash using a potato masher.
  5. Add butter, cream, salt & pepper to taste, and garlic powder if using.
  6. Mash until creamy.
  7. Top with chopped chives for garnish.
