Zucchini Hashbrowns

Ingredients:

  • 3 ripe Roma tomatoes, diced
  • 10 fresh Basil leaves, chopped
  • 4 oz. fresh mozzarella, cubed
  • Salt & Pepper to taste
  • 1 Tsp. aged Balsamic vinegar

 

Directions:

  1. Gently fold tomatoes, basil, cheese, salt and pepper. (If not using right away, refrigerate in a covered container).
  2. Right before serving, drain juices from salsa and gently stir in balsamic vinegar.
  3. Serve immediately.

 

Uses:

  • Great over grilled fish or chicken.
  • Mix with hot or cold pasta.
  • Spread toasted crostini slices with a layer of pesto and top with CaprEASY salsa mixture.
  • Use as a pizza topping.
  • Serve as a side salad.
