Bone-In Barbeque shifts focus to special events

Karaoke, trivia, themed brunch and game night with full bar are regular events, with BBQ buffets on Fireflies game days

A trendsetting brand in the Columbia, S.C., culinary scene since it launched in 2011, Bone-In Barbeque continues to evolve its business model with a revamped focus on special events, catering and private event rentals with a full cocktail bar, as well as its popular tailgate/family-style pickup menu. The coming week features four public events: Tuesday Trivia Night on Feb. 4 and Friday Karaoke Night on Feb. 7, both weekly events; a Broadway-themed drag brunch on Sunday, Feb. 9, part of a successful bimonthly series; and a monthly game night on Feb. 10. “My original passions are event design and catering, which are a confluence of the theater and the culinary arts,” says Chef Scott Hall, owner of Bone-In Barbeque. “Our special events are where our team is able to be most creative, so this is a natural progression for us.”

Rebranded as an event venue with an extensive cocktail bar, public events, private rentals and catering services, Bone-In Barbeque has transitioned from regular meal service to regular special events and BBQ buffets on game days.

In addition to weekly, bimonthly and monthly public events, Bone-In Barbeque plans to host sumptuous barbeque buffets with a full bar on Fireflies baseball home game days when the season starts in April. The first “Bone-In Baseball and BBQ Buffet” event will take place on Feb. 29, 2020, serving lunch and dinner the day of the University of South Carolina vs. Clemson baseball game at Segra Park.

“There is a growing trend across the country in which chefs have a restaurant space and host regular, ticketed public dinners and events, but they don’t necessarily have traditional, regular meal service hours,” notes Hall. “It is a model that has been very successful in markets across the country, but it is a relatively new category here in our region. We are excited to explore and grow that model here at Bone-In Barbeque.”

Chef Scott Hall has made it a priority to ensure that Bone-In Barbeque is a regular presence at festivals and events across the Columbia food scene. Hall and Bone-In Barbeque will share the spotlight with Bodhi Thai Dining’s Chef Nivit Tipvaree at the 2020 Columbia Food and Wine Festival, collaborating on the four-course “Dinner on the Runway” marquee satellite event hosted by Columbia Metropolitan Airport (CAE).

Bone-In Barbeque also will be catering Historic Columbia’s popular Bluegrass, Bidding and Barbeque silent auction fundraiser on March 19 at the Hampton-Preston Mansion & Gardens.

“With the food truck, I loved exploring the world of mobile cuisine, and more recently, I have enjoyed the brick-and-mortar restaurant format,” says Hall. “It’s been successful, with great reviews and a loyal following of regulars, but with a strong special event schedule and spring catering season right around the corner, the time is right to reposition the brand and focus on what our team loves the most: creating fabulous events.”

Bone-In Barbeque’s popular family pickup and tailgate orders will be available for order at least three days in advance, with a $95 minimum order. Popular family-style items include Hall’s smoked brisket-stuffed mac and cheese, 14-hour pulled pork in Carolina mustard sauce, deviled collards, fresh-baked focaccia and more. Bone-In Barbeque gift certificates can be used for food and drink at in-house events hosted at Bone-In Barbeque as well as family-style and tailgate pickup orders.

“At our weekly events, we will be serving cocktails, craft beer and hand-picked wines, as well as either a limited bar menu or party snacks,” notes Hall. “At our BBQ buffet series, guests will experience the best of our scratch-made recipe portfolio, which fans of our buffet events over the years will remember.”

The Bone-In Barbeque venue, with its stylish, long bar, roll-up glass garage doors and spacious outdoor patio, is available for private event rentals and parties ranging in size from 15-80 guests or more for a seated luncheon, brunch or dinner, up to 150-160 attendees or more for standing cocktail events. Catering at the venue is available from either the casual, eclectic Bone-In Barbeque or the high-end, contemporary Scott Hall Catering.

Hall, a Lexington native, studied theater and worked in restaurants and catering in New York City for a decade before founding Scott Hall Catering in the Columbia, S.C., region in 2009-2010. In 2011, he launched Bone-In Barbeque as a food truck and catering brand.

Throughout his culinary projects, from mobile food to the Bone-In Barbeque brick-and-mortar concept that opened in April 2018, Hall has continued to operate the two catering brands side by side, with major corporate clients and wedding clients across the Midlands. Hall’s family also operates the classic wedding and event venue, Corley Mill House on Corley Mill Road in Lexington, S.C., where Hall is executive chef.

The change signals the next wave of Bone-In Barbeque, heralding a return to popular ticketed events like Hall’s legendary high-end holiday buffets and conceptual “X Marks the Spot” dinner series.

“We plan to bring it,” says Hall. “Our team loves events, and we’re very excited about what is to come.”
