Industry veterans open Ella & Ollies on Edisto Beach

Philip Bardin, Brandon Rushing and Jackson Hatch are pleased to announce that Ella & Ollie’s, an Edisto Beach restaurant and market concept, is officially open.

cebulka-ella_and_ollies-7245Chef Philip Bardin, who is best known for the national acclaim he received at the iconic Edisto Island Old Post Office restaurant, is the Partner/Consultant on the venture. Executive Chef/Owner Brandon Rushing, who was a 6 year Edisto resident, also hails from The Old Post Office where he was Sous Chef. Rushing was most recently at Charleston’s mainstay Blossom Restaurant where was Chef de Cuisine since 2011. General Manager/Owner Jackson Hatch, an Edisto native, also comes from the restaurant industry where he has held almost every front of the house position and was most recently on the opening team of Charleston’s Butcher & Bee restaurant.

Winter dishes that are quickly becoming signatures include Roasted Duck with Blueberry Honey Glaze Country or Ham Duck Gravy, the Suckling Cheshire Pig with Geechie Boy Grits, Tomato Braised Collards and Mustard Jus, The Shrimp Louie Salad with Asparagus, Chilled Boiled Egg, Tomatoes, Bacon and Crisp Lettuce, Mussels with Smoked Bleu Cheese, Bacon, Beer, topped with Crispy Potatoes, The E&O Burger with Brasstown Beef, Smoked Cheddar, Bacon Jam, Bibb Lettuce and Tomato and Crispy Buttermilk Fried Quail with Hoe Cakes and Red Eye Duck Gravy.
