It’s officially slow cooker season: Three easy, crowd-pleasing meals for busy autumn nights
September 30, 2026As morning temperatures dip into sweater weather and weeknight calendars fill with sports practices, band rehearsals, and homework, kitchens across the Upstate are welcoming back the undisputed MVP of fall meal prep: the slow cooker.
There is a distinct comfort in walking through the front door after a long day to the rich aroma of dinner that has been simmering unattended for eight hours. Beyond the convenience, slow cooking transforms affordable pantry staples and hearty cuts of meat into tender, nourishing comfort food without a pile of dirty pans at the end of the evening.
Whether you are feeding a crowd after a Friday night football game or looking to simplify family suppers, here are three dependable, family-friendly recipes guaranteed to earn a permanent spot in your autumn rotation.
1. Creamy Tuscan Garlic Chicken
Tender chicken breasts simmered with sun-dried tomatoes and spinach in a rich, savory garlic-parmesan cream sauce.
-
Prep time: 10 minutes
-
Cook time: 3–4 hours on Low
-
Serves: 4–6
Ingredients:
-
2 lbs. boneless, skinless chicken breasts (or chicken thighs)
-
1 tsp. Italian seasoning
-
1/2 tsp. garlic powder
-
1/2 tsp. kosher salt
-
1/4 tsp. freshly cracked black pepper
-
1 jar (8 oz.) sun-dried tomatoes in oil, drained and chopped
-
4 cloves garlic, minced
-
1 cup low-sodium chicken broth
-
4 oz. cream cheese, cubed and softened
-
1/2 cup heavy cream
-
1/2 cup freshly grated Parmesan cheese
-
3 cups fresh baby spinach
Directions:
-
Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper. Place in the bottom of a 6-quart slow cooker.
-
Scatter the drained sun-dried tomatoes and minced garlic over the chicken, then pour the chicken broth around the sides.
-
Top with cubed cream cheese. Cover and cook on Low for 3 to 4 hours (or until chicken reaches an internal temperature of 165°F and shreds easily).
-
Remove chicken to a cutting board and shred into large chunks or slice into medallions.
-
Whisk the heavy cream and grated Parmesan directly into the warm slow cooker sauce until completely smooth. Stir in the fresh baby spinach, cover, and let wilt for 5 minutes.
-
Return chicken to the sauce and toss gently to coat. Serve warm over penne pasta, steamed rice, or with crusty sourdough bread for dipping.
2. Classic Weeknight Beef & Bean Chili
Mild enough for kids, hearty enough for second helpings, and loaded with tender beef, beans, and rich tomato broth.
-
Prep time: 15 minutes
-
Cook time: 6–8 hours on Low (or 3–4 hours on High)
-
Serves: 6–8
Ingredients:
-
2 lbs. ground beef (or ground turkey)
-
1 medium yellow onion, diced
-
1 green bell pepper, diced
-
3 cloves garlic, minced
-
2 tbsp. mild chili powder
-
2 tsp. ground cumin
-
1 tsp. dried oregano
-
1 1/2 tsp. salt
-
1/2 tsp. black pepper
-
1 can (15 oz.) black beans, rinsed and drained
-
1 can (15 oz.) kidney beans, rinsed and drained
-
1 can (28 oz.) crushed or diced tomatoes with juices
-
1 can (15 oz.) tomato sauce
-
1/2 cup beef broth (optional, for desired thickness)
Directions:
-
In a skillet over medium-high heat, brown ground beef with diced onion, bell pepper, and garlic until no pink remains. Drain excess grease and transfer mixture into the slow cooker.
-
Add chili powder, cumin, oregano, salt, and black pepper.
-
Pour in rinsed beans, diced tomatoes, tomato sauce, and beef broth. Stir well to combine.
-
Cover and cook on Low for 6 to 8 hours (or High for 3 to 4 hours) to allow spices to deepen and meld.
-
Ladle into bowls and serve with a DIY family toppings bar: shredded cheddar cheese, sour cream, green onions, sliced jalapeños, and corn chips or warm cornbread.
3. Harvest Apple Cider Pulled Pork
A fall twist on classic barbecue that pairs pork shoulder with sweet apple cider, brown sugar, and warm spices for melt-in-your-mouth sliders.
-
Prep time: 15 minutes
-
Cook time: 7–8 hours on Low
-
Serves: 8
Ingredients:
-
3 to 4 lbs. boneless pork shoulder (pork butt), trimmed of excess surface fat
-
1 medium yellow onion, sliced
-
1 cup fresh apple cider (unfiltered preferred)
-
2 tbsp. apple cider vinegar
-
2 tbsp. brown sugar
-
1 tbsp. smoked paprika
-
1 tsp. garlic powder
-
1 tsp. onion powder
-
1/2 tsp. ground cinnamon
-
1 1/2 tsp. kosher salt
-
1/2 tsp. black pepper
-
1 cup barbecue sauce of choice
-
Soft brioche buns or slider rolls
Directions:
-
In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, cinnamon, salt, and black pepper. Rub evenly over all sides of the pork shoulder.
-
Layer sliced onions across the bottom of the slow cooker insert. Place seasoned pork on top.
-
Pour apple cider and apple cider vinegar around the base of the roast.
-
Cover and cook on Low for 7 to 8 hours until pork easily pulls apart with a fork.
-
Transfer pork to a rimmed baking sheet or cutting board. Discard cooking liquid (or reserve 1/4 cup for moisture), and shred meat with two forks, discarding any large fat pieces.
-
Return shredded pork to the warm slow cooker and toss with 1 cup of your favorite barbecue sauce (and reserved juices, if desired). Cook on Low for an additional 15 minutes until heated through.
-
Pile high on toasted slider rolls and top with crunchy apple slaw or bread-and-butter pickles.
