Pizza Spinach Spiral Sandwiches
1/2 cup whipped cream cheese
1/2 teaspoon Italian seasoning
4 100% Whole Wheat flour tortillas (8)
8 Tbsp. prepared pizza sauce
1/2 cup sweet red bell pepper, chopped fine
1/2 cup black olives, chopped fine
32 pieces of reduced fat turkey pepperoni
40-60 leaves of baby spinach, washed and stems removed
3/4 cup shredded part-skim mozzarella cheese
Mix the cream cheese and Italian seasoning until blended. Spread 1/4 of the mixture onto each tortilla leaving 1/4 at the edge. Spread each tortilla with a quarter of the pizza sauce, peppers, olives, pepperoni, and spinach. Sprinkle each with one quarter of the shredded cheese. Roll each tortilla tightly, carefully tucking in contents as you roll. Wrap in plastic wrap and refrigerate for a few hours or overnight. Cut into 1/4 spirals and serve with a side of extra pizza sauce for dipping.
